Quickly climbing up the ladder, Dillon transitioned from a server role to Assistant Beverage Lead at CA’s storefront showcase restaurant, Taste 222. Dedicating years in the food service industry, he gained experience in serving, event coordination and bartending which made Dillon more than qualified for this role. With 10+ years in the food service industry from fine dining stalwarts, Spiaggia to craft brew pubs and fast casuals - he is well versed in full-service restaurant operations, event coordination and recipe development.  Day to day, he primarily focuses on assisting CA’s consulting efforts in the beverage realm as well as supporting and developing portfolio brands. 

Dillon was immersed in the food industry early on: as a child, alongside his mother, he helped out in the kitchen of Pizza Castle on the south side of Chicago. He is also an active gigging musician and most evenings you can find him either on stage or at the bar of Chicago’s favorite venues.
